Prepare the Pineapple
Set up a breading station with three shallow bowls:
o Bowl 1: Flour, nutmeg, cinnamon
o Bowl 2: Beaten egg
o Bowl 3: Shredded unsweetened coconut
1. Dredge a pineapple ring in the flour, gently shaking off excess
2. Dip into the beaten egg, coating completely.
3. Press into the coconut-breadcrumb mixture, gently pressing so the coating adheres to cover the entire pineapple ring
4. Set aside and repeat with remaining rings.
Assembly Method
Fry the Fritters
Pour Wesson Canola Oil into large heavy bottom skilled to a depth of 1/2 ” and heat oil to 350°F – 365°F.
Fry rings a few at a time flipping until golden crisp. Remove with a slotted spoon and drain on a wire rack. Repeat with remaining rings.
Prepare the Glaze
In a medium bowl, whisk together powdered sugar and rum. Mix well.
Drizzle rings with glaze just before serving.
