Ingredients

Citrus Dressing
Fresh citrus juice 1/3 cup (2 lemons + 1 lime).
Wesson Vegetable Oil 1/3 cup.
Honey 1 tbsp.
Granulated sugar 1 tbsp.
Fine salt 1/2 tsp.
Cumin, ground 1/2 tsp.
Slaw
Cabbage, green & purple 4 cups, shredded.
Carrot, julienned 1 cup.
Red onion, thinly sliced 1/2 cup.
Mango, julienned 2 cups.
Mint 1/4 cup, sliced.
Cilantro 1/2 cup, chopped.
Pumpkin seeds, toasted 1/4 cup.

Method

Citrus Dressing

In a small bowl, whisk together the citrus juice, Wesson Vegetable Oil, honey, sugar, salt, and cumin until fully combined and slightly thickened. Set aside.

Tip: Two lemons and one lime typically yield about ⅓ cup of juice. Try swapping in orange or grapefruit for a slightly sweeter variation.

Assembly Method

In a large mixing bowl, combine the cabbage, carrot, red onion, mango, mint, cilantro, and pumpkin seeds.

Pour the dressing over the slaw mixture. Toss thoroughly until evenly coated.

Let sit for 10–15 minutes before serving to allow the flavors to meld. Toss again just before serving.
