    Frittata
    Bell peppers 2 diced.
    Red onion 1 medium, diced.
    Corn, frozen 1 cup.
    Wesson Canola Oil 3 tbsp.
    Kosher salt to taste.
    Eggs 12 .
    Milk 3/4 cup.
    Parsley, fresh 2 tbsp, chopped.
    Tortilla chips 1/2 cup, crushed.
    Monterey Jack cheese 1 cup, shredded & divided.

    Method

    Southwest Veggies

    Preheat oven to 375°F. Line a 13″ × 9″ baking pan with parchment paper; set aside.

    Heat Wesson Canola Oil in a medium sauté pan over medium-high heat. Add bell pepper, red onion, tomatoes and corn. Season with salt and cook, stirring occasionally, until vegetables are slightly softened and lightly browned.

    Transfer cooked vegetables to the prepared pan and spread evenly. Top with ½ cup of shredded cheese.

    Assembly Method

    In a medium bowl, whisk together eggs and milk until smooth. Stir in chopped parsley, then pour mixture evenly over vegetables.

    Sprinkle crushed tortilla chips over the surface, followed by remaining shredded cheese.

    Bake for 35 – 40 minutes, or until eggs are just set and the top is beginning to brown. Remove from oven and allow to cool slightly before cutting into squares.

    Remix
    Frittata squares can be prepared in advance and stored in an airtight container in the refrigerator for up to 3 days. Reheat gently in the oven or enjoy cold for an easy grab-and-go option.
