Spiced Oil for Foil Packs
In a small bowl, mix together celery salt, paprika, black pepper, garlic powder, and kosher salt until well combined. Gradually add Wesson Vegetable Oil, mixing well.
Seafood Foil Packs
Prepare the corn ribs: start by cutting the top off the corn cob, then cut each cob in half. Stand the pieces up and cut them vertically into quarters.
Chef’s Tip: Cutting the corn into ribs ensures it cooks evenly and quickly in the foil packs.
In a large bowl, place 1 piece of fish, about 1/4 lb of mixed seafood, 4 corn ribs, 1/4 cup of cherry tomatoes, 2/3 cup of halved potatoes, and 1/2 cup of chopped kale.
Chef’s Tip: Frozen mixed seafood works well and is an easy way to get variety without purchasing multiple items.
Spoon 1/4 of the spiced oil mixture over the fish and veggies, gently coating everything. Seal the ingredients in a foil pouch.
Assembly Method
Grill or bake the foil packs:
