Chicken Adobo
Mince half the garlic and smash the remaining cloves. Set aside.
In a large heavy bottom pot, heat Wesson Canola Oil over medium heat and sear chicken on all sides until golden brown. Remove from pot and set aside. Add garlic and onion; cook for 5 minutes stirring until onions are translucent. Return chicken and any accumulated juices to pot along with vinegar, soy sauce, water, peppercorns and bay leaf. Bring to a boil. Lower heat to maintain simmer and cook for about 30 minutes or until internal temperature of chicken is 165°F. Remove and discard bay leaves.
Garlic Fried Rice
Meanwhile, in a large non-stick skillet, heat Wesson Canola Oil on medium heat. Fry garlic being careful not to burn. Remove from skillet onto a paper towel. Add rice to skillet and sauté for 5 minutes or until warmed and coated with oil. Mix in fried garlic and season with salt and pepper.
