Easy & Crispy Vegan Tofu Tostadas

  • Soy, tree nuts (vegan cheese shreds), gluten
  • Ingredients

    Tofu Tostadas
    Firm Tofu 1 pkg (12 oz).
    Smoked Paprika 1 1/2 tbsp.
    Ground Cumin 1 tsp.
    Onion Powder 1 tsp.
    Garlic Powder 1 tsp.
    Kosher Salt 1 tsp (or to taste).
    Ground Coriander 1/2 tsp.
    Dried Oregano leaves 1/2 tsp.
    Wesson Corn Oil 1/3 cup.
    Tostadas 8 pieces.
    Refried Beans 14 can (14 oz).
    Lime Crema
    Plant-based Sour Cream 1/2 cup.
    Lime, zest and juice 1 wedge.
    Pico de Gallo 1/2 cup.
    Shredded cabbage or lettuce 1 cup.
    Cilantro 1/4 cup.
    Guacamole 1 cup.
    Diced Tomatoes 1 cup.
    Sliced Radishes 1 cup.
    Vegan Cheese Shreds 1 cup.
    Lime Wedges 1 lime.


    Tofu Tostadas

    On a box grater, grate tofu on largest holes. In a medium bowl, toss tofu with paprika, cumin, onion powder, garlic powder, salt, coriander and oregano.

    In a large skillet, heat Wesson Corn Oil over medium heat. Add tofu and cook stirring occasionally until golden crisp adding more oil if needed. Remove from heat.

    Lime Crema

    In a small bowl, combine sour cream, lime zest and juice.

    Assembly Method
    To serve, in a heat proof bowl, microwave refried beans for 3 minutes or until warm. Top a tostada with a layer of refried beans, followed by a few spoons of crispy tofu. Add your preferred toppings and a dollop of lime crema to complete your delicious vegan tofu tostadas!
    Great to set up as a “make your own” style service with bowls of garnishes, such as radishes, pickled jalapeños, and cilantro.
    If you do not have access to tostadas, bake corn tortillas brushed with oil in your oven at 400°F until crisp.
    This recipe can also be adapted to create vegan nachos by topping tortilla chips with tofu, beans and garnishes and baking in 350°F oven until vegan cheese melts.
