Ube Donuts
Pre-heat oven to 350°F.
Lightly coat non-stick donut pan with cooking spray.
In a medium bowl, whisk together flour, baking powder and salt.
In a large bowl, whisk together sugar, water, Wesson Corn Oil, ube extract and egg. Stir in flour mixture and whisk just to combine (do not overmix).
Spoon the batter into each donut cavity about 3/4 of the way. Bake for 10 to 12 minutes or until tester inserted into a donut comes out clean. (Time is dependent on size of donuts, larger ones will be at the higher end of the cooking time.)
Place pan on a wire rack and cool for 10 minutes. Gently remove donuts from pan and cool completely.
Glaze
In a small bowl, combine sugar, vanilla and water. For thicker glaze, reduce water amount.
