    Roasted Vegetables
    Yellow Onion, chopped, 2" dice 3 cups.
    Carrot, sliced 1" thick 2 cups.
    Celery stalks, chopped. 2" dice 2 cups.
    Button Mushrooms, halved 2 cups .
    Tomato Paste 1/2 cup.
    Wesson Canola Oil 2 tbsp.
    Kosher Salt 1 1/2 cups.
    Black Pepper, ground 1/4 tsp.
    Water 2 cups.
    Roux
    Wesson Canola Oil 3 tbsp.
    Flour 4 tbsp.
    Water 4 cups.
    Salt 1 1/4 tsp.

    Method

    Roasted Vegetables

    Preheat oven to 400F. Combine onion, carrots, celery, mushrooms, tomato paste, Wesson Canola Oil, salt, and pepper into a large roasting pan. Mix all ingredients together to coat in oil and tomato paste.
    Roast in preheated oven for 60-90 minutes, stirring every 20 minutes or so until vegetables are well roasted. Remove from the oven and pour 2 cups of water into the pan.
    Using a wooden spoon, scrape the pan to deglaze.

    Roux

    In a medium saucepan combine Wesson Canola Oil and flour. Cook over medium heat for 3-4 minutes until slightly browned.
    Add the vegetables and water from the roasting pan along with 4 additional cups of water. Bring to a simmer and cook for 25 minutes.
    Strain the mixture through a fine mesh strainer. Using the back of a spoon or ladle, press as much of the cooked vegetables through the strainer as possible. This adds extra thickness and flavor.
    To thicken the gravy, bring it back to a light simmer and cook for a few more minutes, until it reaches the desired consistency.
    Add additional salt and pepper to taste.

    Assembly Method
    Serve over potatoes, roasted vegetables, or your favorite proteins.
