Shawarma Chicken Salad Sandwich

Juicy, shawarma-spiced chicken takes on a new twist when combined with tangy Greek yogurt, lemon juice, garlic, green onion, and cucumber. The flavors meld together to create a vibrant and creamy chicken salad filling that is perfect for a hearty and flavorful sandwich. Add a touch more of garlic, lemon, and salt to taste, and enjoy the harmonious blend of Middle Eastern-inspired ingredients in every bite.

  • Ingredients

    Shawarma Chicken
    Skinless, boneless, chicken thighs 1 lb.
    Wesson Canola Oil 2 tbsp (divided).
    Paprika 1 tsp.
    Kosher Salt 1 tsp.
    Ground Cinnamon 1/2 tsp.
    Ground Allspice 1/2 tsp.
    Ground Cumin 1/2 tsp.
    Ground Turmeric 1/2 tsp.
    Garlic Powder 1/2 tsp.
    Ground Cardamom 1/2 tsp.
    Freshly Ground Black Pepper 1/2 tsp.
    Chicken Salad Dressing
    Diced Cucumber 1/2 cup.
    Greek Yogurt 1/3 cup.
    Green onion, chopped 2 tbsp.
    Lemon, zest and juice 1 each.
    Salt to taste.
    Hummus 1/4 cup (divided).
    Rustic Sourdough Bread 8 slices.
    Lettuce 8 pieces.


    Shawarma Chicken

    In a large bowl, combine chicken thighs, 1 tbsp of the Wesson Canola Oil, paprika, salt, cinnamon, allspice, cumin, turmeric, garlic, cardamom and pepper. Toss to coat; refrigerate for 30 minutes or more (overnight is okay as well).

    In a large non-stick skillet, heat remaining 1 tbsp of oil over medium heat. Add chicken; cook for 4 to 5 minutes per side or until fully cooked to an internal temperature of 165°F. Remove to a plate; cool in refrigerator. When cool, cut chicken into thin slices.

    Chicken Salad Dressing

    In a medium bowl, combine cucumber, yogurt, onion, lemon zest and juice, and salt. Toss chicken slices with dressing.

    Assembly Method
    Spread 1 tbsp of hummus on 4 slices of bread. Top with chicken salad, lettuce and top with another slice of bread, and enjoy your Shawarma Chicken Salad Sandwich.
    Add pickled turnips and beets for extra crunch and authentic tangy flavor.
