Shawarma Chicken
In a large bowl, combine chicken thighs, 1 tbsp of the Wesson Canola Oil, paprika, salt, cinnamon, allspice, cumin, turmeric, garlic, cardamom and pepper. Toss to coat; refrigerate for 30 minutes or more (overnight is okay as well).
In a large non-stick skillet, heat remaining 1 tbsp of oil over medium heat. Add chicken; cook for 4 to 5 minutes per side or until fully cooked to an internal temperature of 165°F. Remove to a plate; cool in refrigerator. When cool, cut chicken into thin slices.
Chicken Salad Dressing
In a medium bowl, combine cucumber, yogurt, onion, lemon zest and juice, and salt. Toss chicken slices with dressing.
Assembly Method
Spread 1 tbsp of hummus on 4 slices of bread. Top with chicken salad, lettuce and top with another slice of bread, and enjoy your Shawarma Chicken Salad Sandwich.
