    Pasta Chips
    Pasta (farfalle, mezze rigatoni, penne, etc) 6 - 8 cups, dry.
    Wesson Canola Oil 10 cups (for frying).
    Adobo seasoning 1 tbsp (or other spices).
    Dip
    Sour cream 1 cup.
    Wesson Mayonnaise 1/2 cup.
    Ancho chili powder 1 tsp.
    Dried oregano 1 tsp.
    Habanero tamarind sauce 2 tbsp.

    Method

    Pasta Chips

    In a large pot of boiling water, cook pasta according to package directions until tender enough to eat but with a firm chewy center. Drain the pasta and rinse with cold water to stop the cooking process.

    Spread pasta on a tea towel-lined baking sheet and pat dry. Let the pasta dry for about 1 hour.

    Assembly Method

    Preheat Wesson Canola Oil to 375°F.

    Fry the pasta in oil for 2-3 minutes or until golden crisp. Using a slotted spoon, remove the pasta from the oil and season immediately. Serve with slices of lime on the side.

    To make dip, combine sour cream, mayo, chili powder, oregano, and habanero tamarind sauce.
