Cheesecake
Preheat oven to 325°F.
Line an 8”x 8” pan with parchment paper.
In the bowl of a stand mixer, blend cream cheese and sugar on medium speed until well combined with no lumps, you may need to scrape mixture down the sides of the bowl a few times. Add eggs, 1 at a time making sure to scrape down after each addition. Add vanilla and mix just to combine.
Spread batter evenly in to prepared pan and bake for 30 to 35 minutes or until cake is set and lightly golden. Remove from oven and allow to cool completely. Cover and refrigerate for two hours or overnight.
Apple Fries
Peel and slice apples ½ inch thick. Toss with lemon juice and sugar. Set aside.
Preheat oil to 350°F in a large heavy bottom pot or deep fryer.
In a large bowl, whisk together flour, sugar, baking soda and salt. In a small bowl, whisk together egg, vanilla and milk. Add wet ingredients to dry ingredients and whisk to combine.
Dip apple fries a few at a time in batter to coat and carefully drop into oil. Fry until golden approx. 1 – 2 minutes until golden crisp. Remove from oil to a rack over a baking sheet and repeat.
