Ingredients

Roasted Sweet Potatoes
Sweet Potato, large 2 lbs.
Wesson Canola Oil 2 tbsp.
Salt, kosher 1/2 tsp.
Hot Honey Orange Dressing
Wesson Canola Oil 1/2 cup.
Honey 1/4 tsp.
Orange, zest 1 tsp.
Orange Juice 1/4 tsp.
Hot Sauce 2 tsp.
Salt, kosher 1/4 tsp.
Assembly
Roasted Sweet Potatoes .
Red Onion, sliced 1/4 cup.
Pumpkin Seeds, raw and shelled 1/4 cup.
Parsley, rough chopped 1/4 cup.
Hot Honey Orange Dressing as desired .

Method

Roasted Sweet Potatoes

Cut sweet potato into rough sized wedges, toss with oil and salt.
Roast in a pre-heated 425°F oven for about 25-30 minutes or until well roasted and cooked through.

Assembly Method
Toss pumpkin seeds in a drizzle of Wesson Canola Oil and lightly salt. Toast pumpkin seeds in the oven for 5 minutes or until golden and crispy. While sweet potatoes are roasting, make dressing. In a large bowl mix together Hot Honey Orange Dressing ingredients. Add more hot sauce if desired. Remove the sweet potatoes from oven and toss with dressing while still hot. Garnish with pumpkin seeds, red onion, and parsley.
