    Spicy Queso
    Wesson Canola Oil 1 tbsp.
    Jalapeño (optional) 1 seeded & diced.
    Evaporated Milk 1 - 12oz can.
    Cream Cheese 1 - 8oz brick, diced.
    Sharp Cheddar Cheese 8 oz, shredded.
    Rotel Diced Tomatoes & Green Chilies 1/2 cup (optional).
    Sundae Layers
    Spicy Sausages, casings removed 6 large.
    Tater Tots 1 - 32oz bag.
    Wesson Canola Oil 6 cups, for frying.
    Cheddar Cheese 3 cups, shredded.
    Tomatoes 2 cups, diced.
    Olives, pitted & chopped 1 1/2 cups.
    Pickles, sliced 1 1/2 cups.

    Method

    Spicy Queso

    In a large pot, heat oil over medium heat and sauté garlic and jalapeño if using for two minutes. Add evaporated milk, chili powder and cream cheese. Cook stirring until cream cheese is melted. Add Cheddar cheese and stir until melted. Cook for 5 minutes more until sauce is thickened. Stir in Rotel if using and remove from heat.

    Tater Tot Sundae

    Preheat oil to 360°F.

    In a pan, sauté sausage meat until fully cooked. Drain and set aside.

    Fry tater tots in oil until crispy and hot.

    Assembly Method
    To make sundaes, layer tater tots, sausage meat, shredded cheddar, tomatoes, olives and pickles in a tall wide mouth glass. Top with warm queso.
